Marshmallow Icing

  • 2 egg whites room temp
  • Pinch of cream of tartar
  • 1/4 cup sugar

In mixing bowl, over a double boiler, whisk egg whites and sugar until sugar is completely dissolved. Transfer bowl to stand mixer and whip on high until glossy peaks form – about 5 minutes. Scoop mixture into piping bag and toast with handheld torch.
