Gluten Free and Low Carb Chicken Parmesan

Gluten Free and Low Carb Chicken Parmesan!

  • 2 cups red sauce (MamaCindi Sauce)
  • 1 – 4 ounce ball fresh mozzarella
  • 8 – Keto fried chicken tenders
  • 1/4 cup fresh grated Parmesan cheese
  • Salt and pepper

Preheat oven to 400

Slice fresh mozzarella into thin strips, setting aside on a piece of paper towel to dry excess liquid. This will help browning while baking.

Add 2 cups sauce to an 8×8 casserole dish. Layer chicken on top, but avoiding overlapping, if possible. Arrange mozzarella over the top of each chicken tender, tearing smaller pieces if needed. Sprinkle grated Parmesan over the top, as well as fresh cracked pepper and salt.

Place in preheated oven and bake for about 20 minutes, or until heated through and cheese has melted. Without opening the door, turn the broiler to high and allow cheese to brown and crisp under higher heat for about 1 minute. Watch closely as not to burn.

Remove and allow to cool for about 15 minutes before serving. Serves 4

Since we’ve discussed my affinity for my mommy’s sauce in a previous post, I won’t spend time right now telling you how glorious and amazing and delicious it is, because you already know. But it really is all of those things.

I’ve also mentioned how I would eat a bowl of it plain, because it’s THAT good. But you knew that too.

I literally have about 2 cups frozen at all time, for exactly this purpose. I will never use store-bought sauce, and you can’t make me!! (Also, almost ALL jarred sauces have sugar, and quite a bit of it, so you really are better off making your own.)

What’s the ONE thing I could add to make it better? FRIIIIIIIIIIIIIED CHICKEN! And cheese… so, ok, two things. But those are two really magical things. Low carb chicken Parmesan – helllllllllllo, beautiful!

Fresh mozzarella is not essential, but I love its subtle flavor, so I usually opt for it. If you have shredded, that is fine, too, just use about a cup and sprinkle it over the top. Same with Parmesan. I love freshly grated, I think it lends a much richer, nuttier flavor, but if you have pre-shredded or even the powdered, by all means.

And those Keto fried chicken tenders from a few days ago? Those are gonna be the perfect addition to this recipe. Crispy and flavorful, and super quick to make! Layer those pretty maids all in a row, slap on the cheese and get to meltin’!

Don’t be like me and go digging into this masterpiece immediately, you really want to give it a little time to cool (because, ow) but also, the cheese will set up slightly so it doesn’t just slide off when you’re serving. Although, sometimes I steal some from other portions, because… cheese. Don’t ask, don’t tell, right?
