Gluten Free Smores Cupcakes

  • 1 and 1/2 cup AP flour blend
  • 1/2 cup cocoa
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon xanthan
  • 1/4 cup oil
  • 1 tablespoon apple cider vinegar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 cup hot water with 1 tablespoon instant espresso powder. Can sub 1 cup hot coffee as well

Preheat oven to 350 – will make 28 mini cupcakes, 12 full sized or 2 – 6 inch round cakes

Pour all dry ingredients into mixing bowl, with whisk attachment, add all wet ingredients saving hot water for last. Mix on medium high until just combined, using care not to overmix. Scoop into cupcake liners or well oiled cake pans. Bake until toothpick comes out clean. For mini cupcakes, about 18 minutes. For full sized, about 26 minutes. For cakes, about 40 minutes.

Now, back to those desserts. Holidays make me think of fluffy, chocolaty things, so I decided the perfect fit for this holiday party would be delectable little gluten free smores cupcakes! A rich, chocolate cupcake, topped with a freshly made marshmallow icing, torched to toasty perfection and finished with a milk chocolate drizzle and sprinkle of gluten free graham crackers. These little mini cuppies packed a seriously sweet punch.


As always, the base of all of my gluten free wonders is the Holy Grail AP flour blend. This recipe is beyond easy, you literally just throw it all in one bowl and you’re ready to roll. Hot water is essential, though, so be sure not to skip that part.

Making marshmallow icing MIGHT be my favorite thing ever. Basically, because I know that the second it’s finished, I get to light it on fire. That’s something I daydream about doing too many things, so having an actual instance where it’s necessary? Yeah. I’m all in. If you don’t have a kitchen torch, a lighter works, too! I got pretty crafty when I had my bakery, and learned this the hard way when I made this exact recipe but realized I had yet to invest in a torch. Whoopsie! Just use a little extra caution when toasting, because a lighter tends to… well… light. And you don’t really want flaming cupcakes. YOU don’t… I probably do.

If you’re not keeping super strict on dairy free, then any old milk chocolate will do.
