Holy Grail AP Gluten Free Flour Blend

Once upon a time, when I was a mere princess, I was also a naive little business owner, with a literal dollar and a dream. Though I would never go back to those crazy days, the knowledge and culinary wizardry I discovered has served me well.

Every recipe I bake with begins with the same blend of flours. It’s my AP blend and it is a literal cup for cup substitute for regular wheat flour. The recipe is as follows

  1. White rice flour – 3 cups 
  2. Tapioca flour/starch – 1.5 cups 
  3. Potato flour – 1.5 cups 
  4. Xanthan gum – 3 tbsp

Whip this up, store it in an air tight container and you’re good to go! We will use it to create cakes, cookies, breads and muffins, foolproof results, perfect crumb. It’s alllllll good.

    Yes, Blossom is my daughter so I am no doubt a bit prejudice but with her culinary background and her tireless research and experimentation she comes up with some amazing combination that I just would not have thought of and I am a diehard foodie with many culinary heros like Jacques Pepin’, Hubert Keller, Sarah Moulton, Rick Bayless, America’s Test Kitchen, etc. My mantra is “It is all about the Food” and Blossom lives and breaths this and takes to levels well beyond my expectations. She is definitely a pioneer in all things food and her family (including me) are very lucky recipients of her creative process and desire to always push the envelope. Rock on Blossy!!     Hi Blossommmmm,
    Thank you for sharing the gluten free flour blend recipe! It’s helpful of you, since you’ve done the work for us! I’m a gluten-free foodie and so is my granddaughter, Scarlotte. Also, she is interested in becoming a gf baker when she grows up and makes lots of gf baked goods already, even at 9 years old. I can’t wait to share your flour recipe with her so she can use some better ingredients. Thanks so much for being willing to share!

    Just because I’ve seen some confusion about it online, you use potato flour, not potato starch?

      Hi there,
      I’ve used brands labeled starch, and others labeled flour and I’ve had the same outcome as far as end result. For this application, it doesn’t matter much. I believe the main difference is the actual grind, so for certain recipes it will specify starch vs flour, but for this, either one will suffice. 🙂 great question.
