nce upon a time, when I was a mere princess, I was also a naive little business owner, with a literal dollar and a dream. Though I would never go back to those crazy days, the knowledge and culinary wizardry I discovered has served me well.
Every recipe I bake with begins with the same blend of flours. It’s my AP blend and it is a literal cup for cup substitute for regular wheat flour. The recipe is as follows
- White rice flour – 3 cups
- Tapioca flour/starch – 1.5 cups
- Potato flour – 1.5 cups
- Xanthan gum – 3 tbsp
Whip this up, store it in an air tight container and you’re good to go! We will use it to create cakes, cookies, breads and muffins, foolproof results, perfect crumb. It’s alllllll good.
